Your Insulin Health is Poor

Managing Insulin Health is the key to changing the way you look in the short term and managing your weight in the long term.
In fact your Insulin Health should act as the foundation for the way you eat for the rest of your life! It's literally THAT important.
Insulin is a hormone that is secreted by the pancreas (pancreas sits behind your stomach) and its main role in the body is to regulate your blood sugar.
Insulin has to work hardest when blood sugar is at its highest which is whenever you eat something that converts to sugar quickly and enters the blood stream (High Glycemic Foods).
"High GI" foods are all simple sugars, fructose and dense carb sources like pasta, bread, rice etc.
The way insulin regulates your blood sugar is by binding to the walls of tiny cells on 3 areas in your body (Muscle Cells, Liver Cells and Fat Cells), opening the wall of the cell almost like a small key unlocks a door and then shuttling the excess blood sugar (glucose) into the cell.
Insulin likes to shuttle this glucose into your Muscle Cells as a first priority but if your muscle cells are already full then the body needs to find somewhere else to store the excess glucose.
So this is why sedentary people who are not very active (using their muscles) that eat too many carbs end up getting fat.
Because once your muscle cells ability to absorb excess glucose is at capacity a large majority of that excess glucose in your blood ends up getting deposited into your Fat Cells.
Further contributing to this process is that your body can keep meeting the demand by creating more and more fat cells to store the excess blood glucose.
This is specifically how and why a carb rich diet can/will make you VERY Fat.

Calorie counting does not work
Primal Food

This is a BIG part of your problem right now.
You've probably lost weight on Calorie based diets in the past and as a result "portion size" and "calorie counting" have formed the basis of any strategy you've implemented since - when you want to lose some weight.
This might seem at odds with what you have previously learned about dieting so the easiest way to see this Calorie Focused approach as COMPLETELY FLAWED is to break it into 3 Reasons Why Calorie Based Diets Don't Work:

1) Food is NOT just a Calorie Equation
Food is not just made up Calories. Food is Nutrients (primarily) Protein, Carbs and Fats but it's also Fuel and Vitality.
Calories make up a 'component' of what food is but it's only a component.
So basing an entire diet on a component of a much broader phenomenon is a bit like looking at your food through a very narrow lens... AND at the expense of other critical elements that food provides you.
On this basis it's also realistic to assume that by omitting these other elements that food can provide us we are also missing out on a host of other benefits.

2) All Calories are NOT Equal
This is where generic diets and the Weight Loss Industry let you down!
Any diet where you are given a set calorie bracket (e.g. 1200 or 1300 cals) and told regardless of what you eat - as long as you stay within that calorie amount you'll lose weight is setting you up to FAIL.
Not all foods are processed by our bodies in the same way and therefore the calories within those different foods are also dealt with by our body differently.
The best way to demonstrate this is that there are the same number of calories in a Mars Bar as there are in a 150g piece of Grilled Chicken Breast.
You don't need a PHD in Biochemistry to understand the HUGE difference between these 2 foods. It's critical that we no longer make this fundamental mistake when planning your meals.

3) The Assumption that You are Overeating
ALL calorie based diets works off the basis that you simply lower your calorie intake down to a figure which is lower than the amount of calories you currently consume.
EG: You are currently overeating and you need to start eating less food.
The real problem with this assumption is that odds are you are not currently overeating!
As we've already identified - food is not just calories it's NUTRIENTS! So even if you are overeating in terms of calories you can still be MASSIVELY underrating the amount of nutrients you need on a daily basis.
Bottom line is calorie reduction in terms of Calories In - Calories Out only works for chronic overeaters (think Biggest Loser Contestant's).
If you are not currently overeating (5000-6000 cals/per day) then simply adjusting your diet to 1200 cals and hoping for the best is not only not going to work but it just puts your system under further stress.
A system which is under stress is only going to do one thing.... try to SURVIVE!
In order to survive it will try to hang onto as much calorie dense fat as possible.
Asking your body to tone up, lose fat and look great in this 'survival' scenario -- good luck with that!
You need to focus away from Calories and onto maximising the amount of nutrition you're eating and healing your system.
